Last night, I tried out a new recipe that I found on thatwasvegan.com. It was an asparagus and tofu recipe. It was simple to make, and required minimal ingredients. It does take some time to prepare because of draining and marinating the tofu.
I was fortunate to come across Tamari Lite that has 50 percent less sodium than traditional soy sauce. It is also gluten free for those who have additional dietary restrictions. I like the nutritional value of Tamari Lite better than regular soy sauce, and it tastes the same.
Mix Tamari Lite, water, oil and seasonings. Cube the tofu, then add to marinade. Let sit for 30 minutes.
Heat a pan over medium heat and fry the tofu (lightly oil the pan with your choice of oil) 1-2 minutes on each side (as in, all 6) till brown. Remove and set on a paper towel to drain.
Add asparagus to the pan along with the remaining marinade (start with about 2/3 and add the rest as needed). Cook for 3-4 minutes, until they’re tender yet crisp. Return the tofu to the pan to reheat, and mix together. Serve over brown rice or quinoa.
